It's summer and we all need a cool dessert! This sherbet is only 3 ingredients and you don't have to have a ice cream machine.
1 pound frozen strawberries
8 oz Cool Whip Frozen
1/2 cup sweetened condensed milk
Mix ingredients in a food processor or blender. Serve immediately or pour into a 9 x 9 casserole dish. Freeze. When ready to serve, set sherbet out to thaw slightly, mix up and serve.

We stay busy during the summer and this casserole goes together in a matter of minutes and doesn't take long to heat up or gobble up!
1 1/2 packages Hawaiian Sweet Rolls (I buy mine from Aldi's)
1/2 - 1 lb slice lunch meat of your choice
8-10 slices cheese of your choice
1 stick butter
1/2 tsp garlic powder
1/2 tsp onion powder
1 Tblsp minced dried onion
Cut rolls in half and place bottom half in casserole dish (the aluminum pan I used is 10 x 12). You may need to squeeze them together to get them to fit. Also, if you use a larger casserole dish you can use both packages of rolls. Layer lunch meat and then cheese over rolls, place top of rolls on top. Melt butter and add spices. Spoon over rolls. Bake at 350 degrees for 25-30 minutes, until cheese is melted. Serve with fresh fruit, carrot sticks or chips.

This recipe has special memories for me. While growing up I was a 4-H member and with another girl we did a demonstration using this recipe. I don't remember the color of ribbon we received but, I do remember practicing and making Hello Dolly's a lot! It is simple, uses few ingredients, mixes and bakes in the same dish and works great for a 4-H demonstration.
1 stick butter
1 cup graham cracker crumbs
1 cup flaked coconut
1 cup milk chocolate chips
1 cup chopped pecans
1 (14 oz) sweetened condensed milk
Preheat oven to 350 degrees. Melt butter in a 9 x 9 casserole dish in the oven, be careful not to let it burn. Mix graham cracker with butter and pat to make crust. Spread next 3 ingredients over crust. Pour sweetened condensed milk over all. Bake for 25-30 minutes.
Spoon in to bowl while hot and serve with ice cream or let cool and cut into bars.
I have seen this recipe for years and have wanted to try it. I should have made it years ago, it is moist and delicious! This recipe doesn't make a lot which is perfect for 4 people or 2 people who really love chocolate.
1 1/2 cups all purpose flour
3 Tbsp cocoa
1 Cup Sugar
1 tsp baking soda
1/2 tsp salt
1 tsp white vinegar
1 tsp vanilla extract
5 Tbsp vegetable oil
1 cup water
Mix first 5 ingredients in a bowl and pour into a greased 8" baking pan. Make 3 depressions in dry ingredients, two small and one large. Pour vinegar in one small depression, vanilla in the other small depression and the oil in the large depression. Pour water over all. Mix well until smooth.
Bake at 350 degrees on middle rack for 30-35 minutes or until toothpick comes out clean. Don't over bake. Cool and frost with your favorite frosting. I made a cream cheese, butter, cocoa, powdered sugar and milk frosting.
This would be great if served warm with ice cream and not frosted.

Good morning! I have a simple recipe for you today- Toasted Oat and Quinoa Granola Bites. I love making granola bars (I'm actually working on some recipes for the blog) but sometimes if I want a quick snack, they can be a little more time consuming than I want. But these bites are perfect. They were simple to make, made several, and were tasty!
I think toasting the oats and cooked quinoa before mixing all the ingredients together added a nice little crunch to the finished bites.
3/4 Cup old fashioned oats
1/4 Cup cooked quinoa
1 Tablespoon Coconut oil, melted
1 teaspoon Vanilla extract
1/2 Cup Natural peanut butter
3 teaspoons Maple syrup
1/2 cup roughly chopped chocolate candies (could sub chocolate chips)
1 teaspoon Chia seeds
Mix together oats, cooked quinoa, melted coconut oil and vanilla extract. Pour onto greased cookie sheet. Bake at 300 degrees for 30 minutes, stirring every 10 minutes. Let cool.
Stir cooled oats and quinoa with peanut butter, maple syrup, chocolate candies and chia seeds. Roll into bites about 1 Tablespoon in size. Store in the refrigerator.
Makes about 12 bites.
This is quite possibly one of the easiest casseroles to make. It would be great for having family over for the holidays. It could easily be doubled. This casserole is fantastic served warm with the Cinnamon Whipped Cream. The whipped cream could be made the night before you plan to serve the casserole.
3 12.4 oz tubes of cinnamon rolls, divided and cut into quarters
Spray pan with cooking spray and preheat oven to 350. Place quartered cinnamon rolls in casserole dish. Transfer 1 container of icing to a small microwave bowl. Microwave for 15-20 seconds. Drizzle warm icing over cinnamon rolls. Bake for 35-40 minutes, until cooked through in the middle. Drizzle remaining icing on top of cinnamon roll casserole. Serve warm with Cinnamon Whipped Cream.
Cinnamon Whipped Cream
1 cup heavy whipping cream
1/4 cup sugar
1/4 tsp cinnamon
1/2 tsp vanilla
Place mixing bowl in refrigerator at least 30 minutes to an hour before making the whipped cream. Beat heavy whipping cream and sugar on high in cold mixing bowl until stiff peaks form. Fold in cinnamon and vanilla. Keep refrigerated until ready to use.
oThis is a simple recipe with only 4 ingredients! My daughter, Casserole Gal Kristen, made this a lot growing up and used the recipe for 4-H demonstrations and bake offs.
I made it in to bars but it could be molded into a football shape. It is a great finger food! Which makes it a perfect for tailgating!
1 cup white syrup
1 cup sugar
1 1/2 cup creamy or chunky peanut butter
6 cups corn flakes
Note: To make these Gluten Free you can use Chex cereal, Rice Krispies or gluten free corn flakes
Boil the syrup and sugar for 1 minute. Try to be precise with the time or your mixture will be come too thick.
Add the peanut butter to the syrup mixture and mix well. Pour over corn flakes in a large bowl, mix.
You can spoon the mixture on wax paper, pour all of it into a 9x13 casserole dish that has been buttered or mold into a shape.

Two Cup Tuesday
I scream, you scream, we all scream for ICE CREAM! Well, I know I do anyway - I l.o.v.e. ice cream. And during the summer? What a perfect treat!
My kids helped with this dish - it is toddler approved! It was quick, easy and fun to make together. Can you spot the sneaky toddler fingerprint?
Ice cream Sandwiches
*I haven't listed quantities because it is completely dependent on the size/variety/brand of sandwiches and the size of your dish. We used one box (12) of sandwiches and one carton whipped cream for my 8x8 dish.*
Prepare to get messy! Unwrap enough sandwiches to cover the bottom of your pan. Spread on some cool whip and let the kids go crazy with sprinkles!
Unwrap another layer of sandwiches, add the last of your whipped cream and hand over the sprinkle shakers again.
Place in the freezer until everything is set - at least 15 minutes. Then slice and serve!
My kids helped with unwrapping the sandwiches (super messy, lots of fun!) and decorating with sprinkles. Quality time in the kitchen!
There is nothing easier than a casserole that you don't even have to bake! Of course, I think this just barely qualifies as a casserole. Whatever it is, it is delicious, easy and refreshing!
5.9 oz box instant chocolate pudding
3 cups milk
8 oz frozen whipped topping, thawed
8 oz cream cheese, softened
Family size package of chocolate sandwich cookies, crushed
Whisk pudding mix and milk together, following the directions on the box. Whisk in softened cream cheese. Using a spatula, fold in whipped topping.
Layer about a third of the crushed cookies on the bottom of a 9x13 casserole dish. Spread chocolate pudding mixture on top of the cookies, then top with the rest of the cookies. Add some gummy worms on the top!
