This is the gluten free version of our Spinach-Bacon quiche. The only changes are no crust and make sure to use gluten-free bacon. It is just as tasty as the original and you won't miss the crust.
6-8 gluten-free bacon slices (cooked and chopped)
3-4 ounces frozen spinach(squeeze out all liquid)
1 cup half and half
1/4 tsp salt
1/4 tsp pepper
1 cup shredded cheese of your choice
2 Tablespoons butter
Spray casserole dish with non-stick cooking spray.
Cook your bacon and prepare your spinach, if you have forgotten to thaw out your spinach run hot water over it in a colander, making sure to squeeze out all the liquid. (Hint: I buy the 10 oz frozen block of spinach, let it thaw slightly and cut it into sections that I place in plastic containers and freeze for later use.)
Using a fork mix eggs, salt, pepper and half and half, add bacon and spinach mix, add cheese, pour into pie crust and place butter pieces over top of quiche.
Bake for 45-50 minutes at 350 degrees
The middle of the quiche should be set and a knife should come out almost clean when stuck in the center
