I bought this vintage casserole dish recently at an estate sale and knew this quiche was the first thing I wanted to bake in it. It is great served with fruit or a salad and can be for supper or breakfast. My husband said this dish was terrible, after he had eaten his 4th helping!
1 pie crust frozen or homemade
6-8 bacon slices
3-4 ounces frozen spinach(squeeze out all liquid)
1 cup half and half
1/4 tsp salt
1/4 tsp pepper
1 cup shredded cheese of your choice
2 Tablespoons butter
Spray casserole dish with non-stick cooking spray. Place pie crust in dish and work up the sides of the dish with the pie crust. Fit aluminum foil to fit pie crust and fill with uncooked beans (the beans help to keep the pie crust flat.) Bake for 20-25 minutes, you want the pie crust to be almost done.
While the pie crust is baking, cook your bacon and prepare your spinach, if you have forgotten to thaw out your spinach run hot water over it in a colander, making sure to squeeze out all the liquid. (Hint: I buy the 10 oz frozen block of spinach, let it thaw slightly and cut it into sections that I place in plastic containers and freeze for later use.)
Using a fork mix eggs, salt, pepper and half and half, add bacon and spinach mix, add cheese, pour into pie crust and place butter pieces over top of quiche.
Bake for 50-60 minutes at 350 degrees
