I found this recipe in an Old Southern Living cookbook, I made some changes and it is a Delight. It is light and creamy, perfect for when peaches are at their ripest. It can be made a day before and look for people to ask for seconds!
12-14 ripe peaches, pealed, seeded and chopped in small pieces
1/2 cup sugar
1 (11 ounce) box vanilla wafers, crushed
1 stick butter, melted
1 (8 ounce) softened cream cheese
1 pint heavy cream
1 3/4 cup sifted powdered sugar
In a bowl sprinkle sugar over peaches and let set for 30 minutes. After the 30 minutes drain peaches in a colander over a bowl. Drain off most of the liquid. Keep the liquid! Add it to a pitcher of tea to make a delicious addition to your dessert!
In a separate bowl mix crushed wafers and melted butter together. Put in 13x9x2 casserole dish, pat down in bottom and up sides, about a 1/2 inch. Chill.
Combine cream cheese and powdered sugar, beat until fluffy. In separate bowl beat the heavy cream until peaks form. Carefully, using a spatula, fold heavy cream into cream cheese mixture. Fold peaches in and pour over wafer crust. Chill for 3-4 hours.
