Merry Christmas Eve! I am very excited about the holidays coming up- family, presents and food!. These brownies are so yummy for this time of year! They are thick, gooey and just the right amount of minty.
Since this recipe takes two brownie mixes, it will take a little longer than usual for them to bake. You do want to take them out of the oven when they're still a little gooey and then pour the ganache on top when they're still a little warm. This will result in a super gooey, melty, rich dessert. 2 10.25 oz brownie mixes (plus whatever is needed to make the brownies according to the package)
1/2 cup creme de menthe baking chips
10 oz semi-sweet chocolate chips (I used Enjoy Life Mini Chips)
1/4 cup half and half, plus more if needed
Plus more crème de menthe baking chips for sprinkling on top of the brownies
Grease an 8x8 or 9x9 glass baking pan. Mix the brownies according to the package directions. Stir in the 1/2 cup crème de menthe baking chips. Pour the brownie batter into the greased pan. Bake at 350 degrees for about 40-45 minutes. Since these brownies are very thick, it takes a little longer than usual for them to bake. Start checking the brownies at about 30 minutes. Bring them out of the oven when they are still a little gooey.
While the brownies are cooling, make the ganache. Pour the chocolate chips and half and half into a microwave safe bowl. Microwave in 30 second increments until smooth, stirring after each 30 second interval. If the ganache is too thick, add more half and half until it gets to the desired consistency.
When the brownies are almost cool, spread the ganache on top and then sprinkle with extra crème de menthe baking chips. The ganache will melt into the brownies just a little, making them extra gooey and delicious!
