Happy first day of December! It kind of sneaks up on ya, doesn't it? I love this time of year though. With all the hustle and bustle to get ready for Christmas and New Year's Eve, this month is always so busy. And sometimes, you need a quick and easy recipe for a breakfast or a snack. That's what I have today, a recipe that would be easy to make for a quick breakfast or snack before you rush off to finish holiday preparations.
Since I wanted this to be for breakfast, I didn't make it very sweet. But more sugar could be added if you wanted this to be more like a dessert. -Rachel
1 apple, peeled and diced (I used an Ambrosia apple)
2 tsp. white whole wheat flour
2 tsp. packed brown sugar
1 pinch cinnamon
1 Tblsp. butter, plus a little more for buttering the ramekin
1 Tblsp. old fashioned oats
Preheat oven to 350 degrees. Butter a small ramekin until the inside is completely covered.
Cut the 1 Tablespoon of butter into pea sized pieces. In a small bowl, mix together the apple, flour, brown sugar, cinnamon, butter and oats. Pour into buttered ramekin and bake for 18-20 minutes.
