I love this dish and have made it several times - always tasty and always easy!
1/4 cup jalapeno slices (I used jarred for convenience)
1/2 lb bacon
1/4 cup cream
1 cup cheddar cheese
Pie crust (optional)
These ingredient portions fit best in a deep pie dish - if you want to make this in a traditional 9x13, you will need to double everything.
First, press your pie crust into the bottom and sides of your dish. I say this is optional because you can always just pour the filling into a greased dish and bake -- low carb, gluten free and even easier a dish!
Next, fry up that bacon! Cut bacon into 1/2 inch chunks and cook just until crisp. Remove from pan and blog with paper towels.
Last step is to make your filling -- combine all remaining ingredients and pour into the pie crust. (I like to dice the jalapeno first, provides the heat but you won't bite into fire later!!)
Bake at 350 degrees F until eggs are firm - approx. 20 minutes.
Jalapeno Popper Quiche makes a great breakfast, brunch or add a salad and eat as a main dish.
