This cake brings back good memories from my youth during the 60's and 70's. I can remember my Mom making this for Sunday dinners, eat it by itself or with a scoop of ice cream or whipped cream. Any way you go it is a classic!
1 1/2 c.up sugar
2 cup Fruit Cocktail (undrained)
3/4 tsp salt
2 cup flour
2 tsp soda
1/2 cup brown sugar
1 cup chopped nuts
1 stick margarine
1 1/2 cup sugar
1 cup evaporated milk
1 tsp vanilla
1 cup coconut
1/2 cup nuts
Blend sugar, eggs and fruit cocktail. Sift together salt, soda and flour. Add to sugar mixture and stir until well mixed. No need to beat. Pour into greased 9 x 13 inch casserole pan.
Mix brown sugar and chopped nuts. Sprinkle on top of cake.
Bake for 35 minutes at 350 degrees.
Mix margarine, sugar and milk in saucepan, boil 2 minutes. Stirring constantly. Remove from heat, add vanilla then coconut and nuts. Spread evenly over warm cake.
