One of my family's favorite desserts is chocolate chip cookies. Actually, chocolate chip cookies may be my husband's all-time favorite dessert. But sometimes it can be tough to commit to baking a whole batch of cookies. So in honor of Chocolate Chip Cookie day, my husband and I came up with this Chocolate Chip Cookie Casserole.
The bottom layer is the chocolate chip cookie recipe I got from my aunt and I have been baking for years. Buttery, chewy, soft, this is the best chocolate chip cookie recipe I have found. I believe the secret to these cookies is using butter flavored shortening, instead of plain shortening. It's worth an extra trip to the store to make sure you have some before making these cookies. Or do what I do and always keep some in your pantry.

Baking these chocolate chip cookies in a casserole dish and then adding graham crackers, white chocolate pudding and ganache is the perfect way to celebrate Chocolate Chip Cookie day!
1/2 cup butter, softened to room temperature
1 cup butter flavored shortening
3/4 cup sugar
1 1/2 cup packed brown sugar
1 tsp vanilla
3 1/4 all purpose flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 1/2 cups chocolate chips (I used semi-sweet but feel free to use any kind you want!)
6 oz box of white chocolate pudding mix
3 cups milk
8-10 Graham crackers
2 cups semi-sweet chocolate chips
1/8-1/4 cup of milk
Using a mixer, cream together the butter, shortening, both sugars and vanilla just until blended.
Mix in eggs. Then mix in flour, baking powder and baking soda.
Using a wooden spoon, mix in chocolate chips. Be careful not to overmix the dough. Spread dough in a greased casserole pan. Bake in a 350 degree oven for 30-40 minutes. Let cool completely.
Make pudding according to the directions for quick set pudding on the box.
Once the cookie layer is completely cooled, put one layer of graham crackers on the top. Then spread the set pudding on top of the graham crackers.
