Casserole Gal Rachel has a wonderful appetizer idea - Jalapeno Popper Dip. Make it as mild or spicy as you like, and be sure to make a double batch! Serve with chips, veggies and even some fresh salsa.
Another great recipe from Rachel, for a quick dinner idea - spice up her Croque Monsieur sandwiches!
Swap the mozzarella cheese for a Pepper Jack, Smoked Cheddar, or Jalapeno/Habanero variety. Sprinkle in some cooked & crumbled bacon. Add pickled jalapeno slices to the layers. Sprinkle some chili powder into the white sauce. SO many options!
Have fun and share your version on our facebook page or tag us on instagram.
And how about a nice beverage? Casserole Gal Rhonda's Snowy Beach Cocktail is sure to be a hit! If having company tonight - set up a cocktail bar.
Create a station with cups, fun straws, Sprite, the vodka, pina colada mix & juice. Add a platter of sliced oranges, cubed pineapple, strawberries, and fresh mint and let your guests create their own adult or non-alcoholic Snowy Beach beverage!
Just pretty please promise to drink responsibly. And enjoy the day!

Hey guys! If you follow us on Instagram, you know I just tried my first Fluffernutter Sandwich over the weekend. It was so delicious. Definitely better than just a peanut butter and jelly sandwich in my opinion.
But I got to thinking... why just stop there? I should add dark chocolate!
So I added some dark chocolate chips and then cooked them in a casserole dish similar to my sister, Kristen's Oven Grilled Sandwiches. As she points out, this method is a great way to cook several sandwiches at once. So if you wanted to celebrate National Fluffernutter Day today with, say, 3 or 4 (or 5!) sandwiches at one time, you could totally do it! The addition of dark chocolate and toasting them made them even better. Now they were toasty on the outside and perfectly melty on the inside. Happy National Fluffernutter Day! -Rachel
Dark Chocolate Chips (about 1-2 Tblsp. per sandwich)
Preheat oven to 425 degrees. Put a metal casserole dish in the oven. It will stay in there until you're ready to cook the sandwiches.
Spread peanut butter on one side of half the bread and marshmallow crème on one side of the other half of the bread. Sprinkle chocolate chips onto one side of each sandwich. After putting the sandwiches together, spread a little softened butter on the outside of each sandwich.
Carefully remove the metal casserole dish from the oven and lightly spray with cooking spray. Place the sandwiches in the dish and put back in the oven. Cook for 3-5 minutes, flip them over and cook for another 3-5 minutes.

Looks like a regular, cheesy grilled sandwich right? Well, there's something different about this sandwich! I made it in a casserole dish in my oven!
If you need to make several grilled sandwiches at once (tomato soup & grilled cheese sandwich dinner?!?!) this is a perfect technique.
Oven Grilled Sandwiches
.....it's easy peasey rice & cheesy.......
-favorite toppings & seasonings
First - set your oven to 425 degrees. Go ahead and put in a metal casserole. Keep the dish in there until all sandwiches are prepped and the oven has reached the set temperature. This makes the pan super hot and will make your sandwiches crispy.
Next - create an assembly line and prep your sandwiches. Be creative and have fun! I used mustard, smoked turkey, dill pickles and american cheese. Once everything is assembled, smear some mayo on the outsides of your sandwiches === yes, mayo! Mayo is the secret to extra crispy sandwiches. It's a combination of the high heat of the pan and the fat in the mayo.
Finally - once your oven, and your pan, reaches 425 degrees carefully pull the pan from the oven and add your prepped sandwiches. You will hear the sizzle! Quickly put the pan back in the oven and bake for 3-5 minutes. Remove from the oven and flip the sandwiches, then bake another 3-5 minutes. If you really pile on the fillings, you may need to bake a little longer to get everything hot and melted :)
Carefully remove your sandwiches, cut and eat!
What is your favorite grilled sandwich? We'd love to hear your ideas, please share in the comments or on our facebook page!

These sandwiches y'all..... yum. They are SO easy and tasty! Adapt the recipe and preparation to fit your schedules and tastes, but the base recipe is a crowd pleaser!
Baked Meatball Sandwiches
We enjoyed these so much, I made a second batch! Even my toddlers were devouring these sandwiches!
Baked Meatball Sandwiches makes for a great party or tailgate food -- simply cut out the baking step and let guests 'build' their own sandwiches with pre-sliced buns, hot meatballs from the slow cooker and a variety of toppings (pesto anyone?!?).
This has become a family favorite! The buns are full of meat, cheese and spices. You may think the buns would become soggy but, they don't! These are even good the next day.
1 (24 count) Hawaiian Rolls or Regular Rolls
2 lbs hamburger
1 bell pepper, seeded and diced
1/2 medium onion, diced
1 (14.5 oz) diced tomatoes (drained)
1 Tblsp Dijon mustard
3 tsp minced garlic
3-4 dashes liquid smoke
1/4 tsp salt
1/4 tsp pepper
12 slices cheese of your choice, I use either Colby Jack or Mozzarella
1 stick butter
1 tsp Dijon mustard
1/4 tsp powdered garlic
1/4 tsp powdered onion
Brown hamburger, green peppers and onion, drain. Place back in skillet and add drained tomatoes, mustard, garlic, liquid smoke, salt and pepper. Cook until most of liquid is gone.
Slice the rolls in half and place bottom halves in 9 x 13 casserole pan. Spread hamburger mixture over the rolls, layer slices of cheese over hamburger and place top of buns on top.
In microwave, melt butter, add mustard, garlic and onion, mix well. Pour over rolls, let soak in for at least 30 minutes.
Bake at 350 degrees for 20-25 minutes, or until cheese is completely melted.
