This recipe is a great summer dessert, no oven necessary! It was shared with me from my Mother in law and dates back to 1965. Who knew you could whip Milnot?
1 (3) oz package lemon jello
1 cup boiling water
3 Tbsp lemon juice
1 (8)oz package cream cheese
1/2 lb. crushed graham crackers
1/2 cup butter (melted)
1 cup sugar
1 tsp vanilla
1 can Milnot (chilled)
Dissolve jello in boiling water. Add lemon juice and cool.
In separate bowl, add melted butter to crushed graham crackers, mix and pack 2/3 of mixture in bottom and sides of 9x13x2" casserole dish. Reserve remaining mixture for top of cheesecake.
Cream together cream cheese, sugar and vanilla. Add jello and mix well.
In large bowl using mixer, whip Milnot until thick, fold into jello mixture.
Pour filling into crust and sprinkle with remaining crumbs. Chill 6 hours or overnight.
I scream, you scream, we all scream for ICE CREAM! Well, I know I do anyway - I l.o.v.e. ice cream. And during the summer? What a perfect treat!

Ice cream Sandwiches
*I haven't listed quantities because it is completely dependent on the size/variety/brand of sandwiches and the size of your dish. We used one box (12) of sandwiches and one carton whipped cream for my 8x8 dish.*
Prepare to get messy! Unwrap enough sandwiches to cover the bottom of your pan. Spread on some cool whip and let the kids go crazy with sprinkles!
Unwrap another layer of sandwiches, add the last of your whipped cream and hand over the sprinkle shakers again.
Place in the freezer until everything is set - at least 15 minutes. Then slice and serve!
My kids helped with unwrapping the sandwiches (super messy, lots of fun!) and decorating with sprinkles. Quality time in the kitchen!
I love a good s'more and this cake comes close to the real thing, chocolate cake, marshmallow cream, caramel and whipped topping. It is a simple recipe and can be made the day before but, be careful and don't cut large pieces because it is very rich.
I made a few changes, the original recipe called for marshmallow topping, which I could not find, so I used marshmallow cream. I also wanted more cool whip and used 2 containers.

1 box chocolate cake mix along with the ingredients to make the cake
1 (13 oz) marshmallow cream
1 (17 oz) caramel topping
2 (8 oz) container cool whip, thawed
Crushed graham crackers, how many you like, I used about a 1/2 cup
Bake cake according to directions in 9 x 13 casserole pan. While cake is still hot, poke holes in cake with handle of a wooden spoon. Spoon marshmallow cream over cake and let it melt in, spread it as you can trying to get as much as possible into the holes. Next drizzle caramel over cake and do the same thing, work it into the holes. My marshmallow and caramel blended together. Let cake cool. Spread cool whip over cake evenly and sprinkle cake with crushed graham crackers. Refrigerate until ready to eat and store leftovers in refrigerator.

Treasure Box Tuesday
There is nothing easier than a casserole that you don't even have to bake! Of course, I think this just barely qualifies as a casserole. Whatever it is, it is delicious, easy and refreshing!
5.9 oz box instant chocolate pudding
3 cups milk
8 oz frozen whipped topping, thawed
8 oz cream cheese, softened
Family size package of chocolate sandwich cookies, crushed
Whisk pudding mix and milk together, following the directions on the box. Whisk in softened cream cheese. Using a spatula, fold in whipped topping.
Layer about a third of the crushed cookies on the bottom of a 9x13 casserole dish. Spread chocolate pudding mixture on top of the cookies, then top with the rest of the cookies. Add some gummy worms on the top!
